My kids love smoothies and this is a Joothie that is surprisingly refreshing AND decadent. This recipe is good on its own or can be made into lovely popsicles.
So what is a Joothie? Its half way between a smoothie and a juice... its a juice with some body.
The Vitamix (or its counterpart... get it... counter part... because it sits on the counter, lol) is essential because you really need to pulverize the ice for this recipe. And be ready to use that tamper.
The abundance of ice keeps the taste mellow with just a hint of chocolate and the sweetness of the fruits. Perfectly balanced like your favorite red velvet cake. It is a subtle flavor that keeps you coming back for more.
For a little more kick you can substitute 1 cup of coconut water for 1 cup of the ice. With this option you would reserve the ice till the end and just add it to the smoothie... excuse me... Joothie for a few last second pulses.
This is perfect for a hot summer day... or a cold winters day snuggled under a blanket dreaming of summer.
Put it all in your Vitamix and let it do its thing. Keep working your concoction until it has a smooth consistency.
Pour it into 3-4 cups for a cool treat.
